<p>Many people may think that bison meat would be higher in fat like beef.  This is not the case because bison or buffalo graze on grass.   The meat is leaner therefore it does not need to cook as long at higher temperatures like beef.  Statistically beef 9.28 grams of fat, 86 mg. of cholesterol and 211 calories of the 3 meats beef is the least healthy.  </p>
